I tried some baked potato fries from my favorite restaurant and they were AMAZING! And I thought, “Why don’t I make these at home?” To be honest I don’t really make French Fries all that often. I love making Roasted Potatoes. Baking potatoes in the oven is a great side dish. And a cheap way to fill your family up. Then I remembered I have a Vegetable Wedger! (similar one here. This one is cheaper and cuter than mine!) And I knew I had to make some.
It’s a pretty simple recipe. Wash and scrub your potatoes. I love how this wedger speeds things up. I love letting my potatoes soak in ice cold water (Make sure they are covered) to help them be extra crispy. My family LOVED them. The kids totally wanted more. And of course I let them have more, after they finished their real vegetables. Or I guess healthier vegetables. This would be a great, fairly cheap, food to feed hungry teenage boys. I am making it a point to put aside recipes for feeding large amounts of teenagers. Grady and I decided long ago we would love for our kids to hang out at our house. When you have boys it means you have to be willing to feed them. A teenagers eat a lot. So it has to be filling and cheap. Potatoes are great for that. Bake them and throw on some yummy toppings and they are good to go. Another great tool I love is my Silicone Pastry Brush. The bristles don’t get all crazy after you wash them, you never have to pull out a “hair” from a basting brush, and I feel like they are able to really get clean.
I’m not a huge sour cream fan. Really I’m not really into things that are “creamy”, ice cream be an exception. But I don’t seem to mind them when it comes to baked potatoes. My second son LOVES sour cream and it always so excited when I buy some. These Baked Potato Fries would be great as an appetizer, a side dish, or a late night snack. Don’t they look delicious? I was able to take these pictures outside to get better lighting as the sun was heading down. I am pretty sure that my neighborhood kids think I am crazy. And I am pretty sure I make them hungry too.

- Russet Bakes Potatoes
- Oil
- Sour Cream
- Cheese
- Bacon Bits
- Green Onion/Chives
- Salt and Pepper
- Cut your potato wedges. Preheat your oven to 400*. Brush your potatoes with oil. Bake for 1 hour. Top with cheese. Place them back in the oven till cheese melts. Top with salt and pepper. Add sour cream, chives, and bacon. Serve and enjoy!
- If you have time soak them in ice cold water. Be sure to completely cover them or they will brown. I try to soak them at least a 1/2 hour. And hour would be preferred.
