Breakfast Burritos is seriously one of my favorite dinner ideas. I love them at breakfast too! But usually I just scramble some eggs and throw in some bacon bits. But when I make them for dinner I love to fry up some potatoes (or use leftover roasted potatoes from the night before) and bake some bacon. I share my favorite bacon tips in this post. (Thanks again Mrs. Whitman for the tip) The best part is that my kids all cheer when I make these. And I can’t blame them. Breakfast for dinner is always a treat. And this is my personal favorite breakfast. My kids would probably choose our Cinnamon Roll recipe. Either way you can’t go wrong with breakfast for dinner.
- Tortillas (I love Tortilla Land)
- Eggs
- Bacon
- Potatoes
- Avocado
- 1. Cook Bacon in the oven at 400* for 20 minutes.
- 2. Cube potatoes and fry in a pan of oil. When thoroughly cooked and golden place on a paper plate. Season with Lawry's or Salt and Pepper.
- 3. Scramble your eggs. Add a little water and cook in a skillet till ready to your liking.
- 4. Slice avocado and add your ingredients to your burrito. Serve.
- Sometimes I like to make extra baked potatoes or roasted potatoes and use them for breakfast burritos the next day. It saves on time to plan that way.
