Do we even need a reason to celebrate Harry Potter? We don’t. But every July 31st we love to use his birthday as an excuse to eat all things Butterbeer. We also love making Kreature’s French Onion soup for dinner. And we either watch one of the movies or play Harry Potter Clue.
This year I decided to make some Butterbeer Cookie Bars. So much easier than butterbeer cupcakes. And with school back in session I needed to make things easy at our house.
And these Butterbeer Cookie Bars are great for September 1st (when Hogwarts Express leaves) or for a Harry Potter party or Halloween. Really you can make them anytime you want something magical. Check out our Harry Potter posts here.
This recipe is modified from Real Life Dinner. You might recognize them from my Sprinkle post. You have to click over and see the frosting she uses. It’s so good!!! I make them all year long. Trust me you will be thanking me!

- cube butter
- 1/4 cup + 2 Tablespoons canola oil
- 1/2 cup + 2 Tablespoons sugar
- 1/4 cup + 2 Tablespoons powdered sugar
- 1 egg
- 1 Tbsp water
- 2 3/4 cups flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- pinch baking soda
- 5 oz butterscotch chips
- 1/2 cup heavy cream
- 1/2 cube butter
- 1/2 teaspoon vanilla
- 1/2 teaspoon butter flavoring
- 1/8 teaspoon salt
- 8 oz powdered sugar

- Preheat oven to 350* and grease a 9x13 pan.
- Cream butter, oil, sugars until combined.
- Add egg, water, and vanilla and continue to beat.
- Add dry ingredients and mix until completely combined.
- Press cookie mixture into your pan. I like to use my hands. Sprinkle a little sugar on top before placing them in the oven.
- Bake for 14-16 or until the edges are lightly brown. You don't want to over cook them.
- Let cool before topping with butterbeer frosting.
- To make the frosting melt butterscotch chips and heavy cream over medium heat, stirring constantly.
- Cool your ganache (melted butterscotch chips and heavy cream)
- Beat your butter until nice and fluffy. Add ganche, vanilla, butter flavoring, and salt until combined.
- Beat in powdered sugar, a half cup at a time until you have reached the desired consistency. Feel free to thin it out with some heavy cream, adding a Tablespoon at a time.
My son and I just love the illustrated Harry Potter books. They are gorgeous. And right now we are reading Prisoner of Azkaban so it only seemed fitting we would celebrate Harry’s Birthday with more butterbeer. We also used our 3 Broomstick mugs and made Butterbeer to drink as well.
These kind of magical little details help books come alive and get kids excited about reading. I had some extra gold sprinkles so I thought why not?
