Our family loves fast and simple dinner ideas. This Chicken Pesto Sandwich is delicious and easy to make. Inspired by the Chicken Pesto at Corner Bakery. When I worked at the salon I loved when we would pick up lunch from Corner Bakery. I always got their Chicken Pesto. This dinner is easy and perfect for the weeknight when life is crazy with scouts, soccer, and piano. Sometimes I throw some chicken in a crockpot along with some Pesto from Sam’s Club. Other times I use leftover chicken or one of those rotisserie chickens and shred it and then add the Pesto. I do have two kids who haven’t acquired the taste of pesto. I will either not add pesto to all of the chicken or let them have veggie sandwich. Because the main ingredient is toasted bread I usually don’t have any complaints. I love serving it with salad or raw carrots and hummus. Or maybe even some Baked Potato Fries.
Doesn’t this look amazing? Makes me want one right now. But maybe because life is a little crazy right now. We were given a notice saying we have to be out of our home by the end of the month. That alone is enough to make things crazy. But we have had some wonderful tender mercies (I’ll fill you in later!) and I found out at my Galentine’s Brunch that we were able to buy a home. So thankful they accepted our offer! You may have noticed it’s been a little quiet around here. I am in full packing mode. There is so much to organize, donate, and pack. Let alone working on things such as our Blue and Gold, school projects, and other life expectations. And I would love to have this for dinner but we are trying to eat everything in our freezer and pantry.
- Hoagie Rolls
- Butter
- Pesto Sauce
- Cooked Chicken, shredded
- Tomatoes, sliced
- Arugula
- Onions, sliced
- Place your oven on Broil. Cut your sandwich lengthwise and butter both sides. Place your bread in the broiler till golden and toasty. Add Pesto to your chicken. Top your sandwich with chicken, tomato, arugula, and onions.
- Enjoy!
- You can use leftover chicken or a rotisserie chicken.
