I love dessert! And sometimes the simple things are my favorite. Take these Cinnamon Oatmeal Cookies. You may remember them from our Dinosaur Cookie Post. If you made them I know you will remember them. These cookies are good. And honestly I am not even that crazy about cinnamon. But this cookie not only makes your house smell amazing, but they are the perfect Oatmeal Cookie. And so easy! Last time I made them I thought they would be perfect in a Ice Cream Cookie Sandwich kind of way. And I was right. This cookies tastes lovely with vanilla ice cream.
I started making Cookie Ice Cream Sandwiches with our left over cookies from Cookie Night. Not familiar with Cookie Night? Well my dear friends in California always have cookies on Fast Sunday (The first Sunday of the month dedicated to fasting in our faith). It was a great way to fellowship and visit with new members or old friends. My kids LOVE going over there. No phones or technology. Just great conversation around their table or island and my friend Julie’s famous cookies. Seriously the best chocolate chip cookies. But even better than her cookies is the great company. When we moved from Orange County to Arizona we started having our own cookies night to meet new families and be welcoming to the ward. It has blessed our family.
But some Sundays we have quite a few cookies leftover. And then I remembered this kitchen gadget I bought from my niece’s school years ago. I pulled it out and made some cookie sandwiches. The perfect Family Night treat for Monday night. They remind me of the Diddy Riese in Los Angles. We love to stop there and get a treat after visiting the LA Temple or the Griffith Observatory, all of which you should check out if you visit LA.
Assembly is easy with this handy tool. I like to make them in the morning and serve them that evening. I simply wrap them in saran wrap after assembling. And I pull them out of our freezer before our lesson so they have a couple of minutes to defrost. These would be great for a birthday party too! And it’s it great to look back and see your photography improve! The photo below was taken last year.

A little tip after I roll them into a ball (I just make regular cookies, not dinosaur shaped ones) I flatten them a bit with the bottom of a cup. It helps them keep a better shape. I try scooping them with this tool. Easier to make up your cookies and helps to having an more accurate carb count in case you have a diabetic in your house too.
