Are you ready for the easiest Taco Soup Recipe ever? Back when I was an assistant to the amazing Carol (you may remember the story where she taught me to be kind) I was applying color or holding foils or something important. Her client, and I can’t for the life of me remember which one, told Carol she found this easy soup recipe with only 5 ingredients. 5! Carol wanted a copy and I quickly jumped in that I wanted to know too! All this recipe requires is that you open up cans and throw in some cooked ground beef. That’s it! Now when it comes to toppings you could argue that this recipe has more than 5 ingredients, but let’s not argue. Who doesn’t love a great crockpot recipe?
This recipe is great for using cans from your food storage. And they are ingredients that I usually have stocked in my pantry. We actually made it again this week, even though our monthly menu didn’t have it on there. In case you missed this post you may have missed that we are in the process of buying a new home. So we decided to stop buying groceries and use what we have on hand so we don’t have to pack any more than needed. We even have been busting out our number 10 cans of peaches and pears so we don’t have to pack them. So naturally this dinner idea was perfect! And my family loves it! Well…my third son is in a “I hate soup” phase so he doesn’t like it based on principal. But the older two cheer when I tell them what’s for dinner. And again I think a great selling point is that you can choose your own toppings. My kids love choices.
Okay, enough chit chat, I will get to the recipe. But seriously so easy I have it memorized.
- 1 lb of cooked ground beef
- 2 cans of corn
- 2 cans of beans (I love using black beans)
- 1 28 oz can of diced tomatoes
- 1 Tablespoon of Taco Seasoning
- Cilantro
- Salsa
- Avocado or Guacamole
- Crushed Chips or Tortilla Strips
- Cheese
- Sour Cream
- Lime Juice
- Cook ground beef over medium heat, drain fat. Open cans and pour them in your crockpot. Make sure you don't drain your cans. Add Taco seasoning and cooked meat to your crockpot. Heat on low for 6 hours. Enjoy!
