I love easy muffins recipes! Especially when they are yummy and healthy. My kids love these muffins so much. And they have no idea what bran is associated with. Muffins make for a great breakfast when you are on the go. To a kid they look like cupcakes. And muffins are the perfect recipe to let your little ones help you with. I love that all my children love to help in the kitchen. That is sacred time where we can talk and work together. I’m not going to lie, I was super proud when Draco was at preschool and he was kneading the play-doh like you knead bread. Muffins are simple and easy to make which increases the likely hood that your little ones will want to give them a try.
Isn’t my daughter so adorable? I love when we can bake together. And since Yoda was started preschool we have more time together during the week. She did a great job putting the muffin liners in our trays. And you could tell she was bursting with joy being able to help me. Well, not in this picture. She’s taking her job seriously, but she really loved it. I loved baking with my mom when I was younger. I am looking forward to many wonderful moments in the kitchen together. A great tip for cooking with toddlers: Lysol the counters before you start. She loved dumping the ingredients in but her aim is really off. We just scooped up the mess and threw it in the bowl.
Kitchen Aids are amazing tools. I love how enthralled she is watching it go. Aside from lining the tray and adding the ingredients Georgiana really enjoyed using the sifter. This is a perfect was for her to exercise her fine motor skills. I love teaching while in kitchen. It’s a great way to learn math. Let’s say we are ready to add our cup of flour. You can use your 1/3 of a cup and have your child count with you as you empty each cup. This is what I tell myself when all our 1 cup measuring cups are dirty. It’s just a chance to practice doing math. For older children asked them how they would solve the problem if we only had the 1/3 cup clean and we needed 1 1/3 cups of flour. How many times would we fill our 1/3 cup?
I love using this scoop when filling our muffin pan. Not only does it help the cooking time when your muffins are all the same time, it helps me figure out the carbs in each muffin more accurately. I love using Spark People’s recipe Calculator. I’m trying to record how many carbs are in each of our recipes. It make life easier when you have a diabetic child. I hope this recipe inspires to get in the kitchen with your child. It’s okay if thing don’t look perfect. You are creating something even more important. We put our muffins in the oven and ran to get Yoda from school. We made it back a little later than I would have liked but life rolls on. And even though Georgiana is just a little girl she loved telling Daddy at dinner that she helped mom in the kitchen. We are fostering our relationship. And she is learning I think she has something worthwhile to share. I hope her confidence grows and her knowledge that I have confidence in her too.
Easy Bran Muffins
- 1 1/2 cups wheat bran
- 1 cup buttermilk
- 1/3 cup vegetable oil
- 1 egg
- 2/3 cup brown sugar
- 1/2 tsp vanilla extract
- 1 cup all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup raisins (optional. I never do raisins.)
- Preheat oven to 375. Line with paper muffin liners.
- Mix together wheat bran and buttermilk; let stand for 10 minutes
- Beat together oil, egg, sugar, and vanilla and add to the buttermilk/bran mixture.
- Sift together dry ingredients. Mix into buttermilk mixture until just blended. Scoop into prepared pans.
- Bake for 15-20 minutes or until a toothpick comes out clean.
