This new ice cream flavor is a new family favorite. Cookie Butter ice cream is seriously a dream! I saw Biscoff ice cream online, but it was only available in the UK. I knew I wanted to try it. Cookie Butter is the new Nutella. And if you’ve been around you know it’s one of my favorites. This ice cream is so easy to make. Especially with my ice cream kitchen aid attachment. It sets up so quickly. I just keep my bowl in the freezer so we are always ready to make ice cream. This kitchen attachment is such a great investment.
I found these Biscoff cookies at Winco and they are delicious. If you can’t find them at your local grocery store you can order them here from Amazon. I love putting the cookies in ziplocks to crush them. I love using my roller to crush them. I like leaving some larger cookie pieces so I’m not just left with crumbs. My package had more than 10 so we were able to sample some cookies while we waited for the ice cream to set.
We were so excited to have one of my best friend’s in town when we made this ice cream. They were hooked and planned on stopping by Trader Joe’s to pick up some cookie butter. You can substitute any biscoff spread, but the one from Trader Joe’s is our favorite!
- 2 eggs
- 3/4 cup sugar
- 2 cups of whipping cream
- 1 cup milk
- 1/2 cup cookie butter
- 10 Biscoff cookies
- In your mixer whisk eggs until light and fluffy.
- Add sugar slowing and continue whisking.
- Pour in whipping cream and milk to blend.
- Add in cookie butter butter and mix.
- Pour into your ice cream maker and follow their directions. I mix mine for 20 minutes.
- Add cookie pieces the last 5 minutes.
- Transfer to a freezer container and freeze.
This recipe won’t last long in your home! It’s just too good. Our family is trying to say yes to more ice cream flavors this summer. Eating delicious ice cream is such a fun summer memory. It’s crazy to think we only have 5 summers left with our oldest before he goes off on his own. We are trying to seize the day and milk it for all it’s worth.
