I love easy dinners. And my diabetic son LOVES when we have Omelettes. He is learning how to make his own which is perfect for when he wants a zero carb snack. One of the reasons my kids love this meal is they get to choose what they want in their omelette. My kids love having the ability to customize their omelette. And I have to say as they get older they are getting better at branching out. Our youngest boy only ever wants cheese and bacon. But Draco even requested 3 mushrooms last time we had these. This meal is super quick and easy. And it’s got a ton of protein, which our kids really need. I also love how it’s not a ton of meat. I try to have a couple meals where we have little to no meat. And it’s perfect for breakfast or dinner.
Side note I am thankful for wonderful friends. I can’t going back and forth on how to spell omelette. I’ve seen it spelled differently. I felt like Shawn from Psych who always says “I’ve heard it both ways.” or I guess read it both ways. Luckily I have a friend who is brilliant and I knew would have the right answer. Apparently it’s French. And I can trust her judgement. She use to work for parliament.

- 3 eggs
- 1 Tablespoon water
- Butter
- spinach
- mushrooms
- bacon
- olives
- green onions
- tomatoes
- cheese
- avocado
- Whisk together 3 eggs and 1 Tablespoon of water. Heat your skillet on medium heat. Add some butter to our pan to coat the bottom. Pour in your egg mixture. Add your favorite toppings to half of the egg mixture. When the sides seem set lift up your edges slightly to remove them from the pan. When "top" of the omelette looks set flip that side over your topping side. Press down a bit on your omelette. Some egg mixture might run out a bit. When it looks set transfer your omelette to your plate.
- Top with avocado and enjoy!
- When adding ingredients pay attention to what you add first. I like to add my spinach and mushrooms first because I want them to cook the longest. Tomatoes I usually add last.
