I love eating Pasta Salad in the summer! This Pasta Salad recipe is such an easy one. You can make it ahead of time which is perfect for busy moms. And my kids love it! This is my mom’s recipe and it’s my favorite! I’m not a big fan of heavy sauces. And I love how easy it is to make. I made this pasta salad recipe for my family for Memorial Day and it was a big hit! I loved that I could make it early in the day (or the day before if you are more on top of it) and it was ready to go when our burgers were done. That gave lots more time for swimming and playing with my family.
I’m super excited to make it again for the 4th of July. If only they had blue bell peppers. That would make it perfect for the 4th.
On Memorial Day I also made hamburgers for our family. The best part was trying Two Caroline’s Homemade Hamburger Buns. Seriously so easy and they tasted wonderful! You just have to start them earlier in the day to give them time to rise. I don’t think I am every going to buy buns again, they were that easy.
Besides Pasta Salad I also love serving fruit, green salad, and maybe some baked beans. Eating outside in the summer is one of my favorite things to do as a family. And my kids are big fruit lovers. They are even willing to have some green salad to get some more fruit. I hope this Pasta Salad Recipe is a blast at your next barbecue! You can thank me or my mom later!
- 1 package of cooked pasta
- 1 c olive oil
- 2/3 c white vinegar
- 2/3 c Parmesan cheese
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 1/8 t garlic powder
- Chopped parsley or 1 T dried parsley
- Cook pasta following the directions on the box.
- Add the rest of the ingredients and toss with pasta.
- Chill in the fridge then serve.
