Our summer gardening is giving us a great crop of zucchini. And my family’s favorite way to eat zucchini is in bread. What can I say? We love bread. And this quick bread recipe is a keeper!
I love being able to grate zucchini and freeze some later so we can still make zucchini bread later. And it makes my house smell amazing. I found this recipe over 10 years and it’s a staple in our family.
And a great reminder to my kids that when they say they don’t like a certain food that maybe they should try preparing it a different way. Good life lessons are often found in the kitchen.

- 3 cups All Purpose Flour
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 3 tsp ground cinnamon
- 3 eggs
- 1 cup vegetable oil
- 2.25 cups sugar
- 3 tsp vanilla extract
- 2 cups grated zucchini

- Grease and flour two 8x4 loaf pans.
- Preheat oven to 325*
- Sift dry ingredients together.
- In a large bowl beat eggs, oil, vanilla, and sugar.
- Add about a third of your sifted ingredients to the large bowl. Mix. Continue until your mixture is combined.
- Stir in grated zucchini until well combined.
- Pour into prepared pans and bake 45-60 minutes or until your toothpick comes out clean.
- Cool in pan on rack for 20 minutes. Remove and let cool completely.
You can add a 1/2 cup of your favorite nuts in you would like. Add them with the zucchini and stir. Our family typically doesn't do nuts, but you are invited to 'go nuts'.
This recipe is easy and sure to be a keeper in your family. I’m still working on getting my family to eat zucchini by itself but right now I’ll settle for them eating it in bread form.
