Galentine’s Day is really the “best day of the year!” I’m so thankful for amazing ladies in my life. And this Galentine’s Waffle Bar was a great excuse to get some girl time. I absolutely love being a mother. It’s what I’ve always wanted to be. And these are the days I want to remember. But that being said, I need opportunists to recharge my batteries. And girl time always makes me a better mom. Part of it is that I have some truly amazing female friends. They are kind and thoughtful, funny and creative, and they encourage me to be at better person. I love being around amazing, selfless women. Women who listen and serve. Women who stand up for what is right. And women who include and strengthen each other.
So Galentine’s Day is a perfect excuse to gather with some of my lady friends for a quick brunch. Last year’s Brunch was a blast! But to make things easier this year I opted to make it a Potluck Brunch instead. I provided the Waffle Bar, Cinnamon Rolls, and some delicious party punch. If you are familiar with the hilarious show Parks and Rec, they you know Leslie Knope (inventor of Galentine’s Day) is all about waffles. But since we don’t have a JJ’s Diner in the East Valley I decided to make my own Waffle Bar.
You simply need Waffles, homemade or store bought, and toppings. I served butter, syrup, powdered sugar, fresh fruit, and sprinkles. I don’t know how I forgot to put out the Whip Cream? My friend Kelley and I did party pretty hard the night before at Night to Shine, a special needs prom. And I like to think that Leslie, who is known for doing it all, would have some compassion on me as I try to juggle the things on my plate right now.
For the decor I hit up the dollar tree store to grab some heart doily’s and such to make our eating area festive. I made a simple bunting from sparkly hearts I picked up along with some twine. I used some material I had on hand and some roses from my daughter’s Alice in Wonderland party a few years ago. I also put up this old window I found at a garage sale. It’s suppose to be in my boys bathroom if I ever get it painted. And I snagged that little cake plate from Target. Sometimes having a little extra beauty really makes a place feel special. It was fun to decorate with red, white, and gold this year.
The most important part of our brunch was my dear friends. I’m so blessed to have made such great friends while in Arizona. It was wonderful to chat and catch up and visit with everyone. In fact it was so lovely that I totally spaced on getting a picture of us. I’m so glad we could visit and enjoy each other’s company! And I am thankful for a great hubby who encourages and supports me in hosting events for my friends. He got the kids out of the house and took them to see the new Lego Batman movie.
