Did anyone notice I didn’t post my monthly dinner menu last month. It was one of those months. Having a week to plan a birthday party (still haven’t posted it yet), camping in California for Fall Break, and sewing 6 Lord of the Rings costumes. We did a lot of grilled cheese, burritos, cereal, and other quick meals. My afternoons were more stressful. In addition to having to sew costumes or hold scouts, I was trying to come up with dinner ideas. I meant to make a menu when we got back from our trip but friends were in town and then my daughter got lice (ewww! I know!) and it just didn’t happen.
So while serving my children Chicken stir fry on Sunday, and listening to them complain about the vegetables (horrible mom I know), I went ahead and planned out the month and got their input. Even the hubs pitched in some ideas. So let’s get to our monthly menu. And I made sure to use that leftover turkey and ham into our menu plan.
