I’m pretty sure my kids are back at school in a week. A WEEK! It’s totally bumming me out right now. To be honest, I really love summer! I have lived in Arizona for over a year now and summer is still my favorite time of the year. I love having my kids home. I know a lot of my friends look forward to when they go back to school but it really bums me out. Summers are magical. We go on fun adventures. We can stay up late listening to audio books. Our days are filled with fun. There is no homework or rushing in the mornings.
We were so blessed to be able to travel to Utah and California this summer. We have had some really fun times. Another great blessing is getting an amazing ice cream maker from 360 Thrift for only $7. We have decided to make a new flavor each week. I can’t think of a better way to enjoy summer. Let’s call it our Summer of Ice Creams. We started with Mint Oreo. This week we made Ben and Jerry’s Fresh Georgia Peach. Peach Ice Cream tastes like summer. It’s so refreshing and light. I really wish I could share the recipe, but I am pretty sure I’m not allowed to as I read the copyright information, but I can share the link to purchase this recipe book. So we prepare for the last week of our summer. But we aren’t really ready to give up on our fun adventures. And we are going to keep on making new ice cream flavors each week as well. My hubby even made some ice cream that has low carbs. Apparently it has been killing him that we have fresh homemade ice cream in our freezer. Don’t tell him how yummy this flavor is. He has lost so much weight and we are really proud of him. So we do our best to not eat it in front of him.
Not only I am I going to be missing the carefree summer days, but I have to deal with where I am going to send my oldest for school this next year. And I am not really ready to deal with that yet. I have been trying to get Gandalf into a new school that might be a better fit for him. It’s been a little stressful and we are praying we find the best place for him. I absolutely love our school from last year, but we are trying to find a program that can work with his strengths. The new school I love doesn’t start until August. Wouldn’t it be lovely to know we can go there and enjoy summer even longer. We may need to enroll him into our previous school until they have room for him. I love that there are so many options for schooling here in Arizona. I am hoping we get bumped up on the waiting list for this new school. But I may have to have my kids attend two different schools this next year. I have been trying not to think about it and spending my energy on enjoying on our fun trips. Or making ice cream. Because stressing about it won’t make me know what school he is actually going to attend. Which brings me back to peach ice cream. A perfect treat to remind you how lovely summer can be.
