Sometimes the best dinners are really the simplest. BLT’s are a favorite in my home. These are the best BLT’s! I love this method of cooking bacon. Learned it from Mrs. Wittman, my Foods, Child Development, and Singles Living teacher. The rest of my friends were off studying higher math and sciences while I was learning the perfected art of cooking bacon. A skill that I am sure will bless me for the rest of my life. And in case you too missed out on this essential lesson I am only too happy to share it with you.
In addition to the easiest way to cook bacon I also have my favorite way to make sandwich bread. Personally I love sourdough! It’s heavenly! I simply apply a layer of butter and then broil on the oven till golden. Absolute perfection. This quick and easy dinner is perfect when life is busy and crazy. This week we are hoping to get the keys to our new home. Our house is mostly packed up which includes a lot our kitchen. Dinner can be a challenge when you only have access to some of your kitchen tools. But I still want to make meals from home. Buying a house means we need to save money too. So eating out for our meals isn’t ideal for us. Another reason why this meal is so great. I buy bacon on sale and freeze it. I just need to make sure we have lettuce, tomatoes, and avocados to go with it. Protein and veggies taken care of. And I Iove serving meals that have meat sparingly.
And if you also have children who have a hard time eating vegetables, don’t worry. Everyone gets to choose what toppings they want on their BLT’s. And maybe my 5 year old only has bacon, but I bet someday he will branch out and try some lettuce and tomato. This sandwich can be served with fruit, salad, carrots with hummus, or some Baked Potato Fries. I’m sure we are going to be eating lots of BLT’s this summer after swimming all day long.
- bread (I love Sourdough)
- butter
- lettuce
- bacon
- tomato
- avocado
- salt and pepper
- Heat your oven to 400*.
- Line the bottom of your oven pan with foil. Spray the top with cooking spray.
- Arrange bacon on pan and cook for 20 minutes
- When finished with the bacon turn your oven to broil
- Spread butter on your bread and arrange on a pan
- Broil your bread until golden.
- Add your lettuce, tomato, bacon, and avocado
- Salt and Pepper to your taste and serve.
