When I was younger my mom made lentil soup and I was surprised that I liked it. Only bad memory associated with it was when my brother spit a lentil at me from across the table and it landed on my lip. Seriously freaked me out. But I wanted to give my kids a chance to try lentils out and I am happy to say 3 out of 4 love it. Just Yoda doesn’t like it. But it’s filled with vegetables and he is in that stage where everything with vegetables is disgusting. My kids even want it for leftovers the next day. Although my hubby isn’t crazy about lentils he does compliment me on my use of food storage items. I love this recipe. It’s filled with healthy foods, it’s easy to make, and it’s a great meatless dinner option.
- 1 16oz bag of lentils
- 2 quarts of broth (I used chicken, but feel free to use vegetable)
- 1 cup water
- 3-4 carrots, peeled and sliced
- 1 onion, chopped
- 2 cups mushrooms, sliced
- 1 8oz can of diced tomatoes, with juice
- 1 tsp pepper
- 1 Tbsp Basil
- 2 cloves of garlic
- 2 tsp thyme
- Mix the ingredients in the crockpot and cook for 6 hours on low.
